    April 2023- American Key Food Products (AKFP) recently expanded its tapioca product line by introducing the native waxy tapioca starch, a gluten-free, non-GMO ingredient with a high amylopectin content. This starch is sourced from AKFP's Asian production partner and offers functionalities that make it an immensely effective stabilizer, thickener as well as emulsifier, the company states. Due to its high amylopectin level, the native starch retains water during the freeze-thaw process in frozen foods. As a result, it serves as an excellent stabilizer and general thickener for products subjected to significant temperature fluctuations during processing. The native waxy tapioca starch produces viscous pastes with an elastic texture in the frozen items such as noodles, dim sum and also transparent fruit fillings. It also provides emulsification and improves the mouthfeel. Potential applications include baked goods such as cheese bread as well as products requiring extended shelf life.
