Citric acid is a tricarboxylic acid with molecular formula C6H8O7 and has CAS (Chemical Abstracts Services) number 77-92-9. Citric acid chemical structure consists of three carboxyl functional groups (-COOH) with attached hydroxy-propane. Citric acid is a natural acidulant found in fruits, microbes, animal tissues and plants. Commercially, it is produced by microbial fermentation of carbohydrate substrate and is available in anhydrous as well as monohydrate forms.
Major applications of citric acid are in food & beverages, pharmaceuticals, detergents and others. Among all these applications, food & beverage is estimated to be a most prominent application accounting for more than two third of the overall consumption.
